- 1 eggplant
- 2 or 3 ripe tomatoes
- Italian flavored bread crumbs
- 1/2 c. Parmesan cheese
- 1/2 c. grated Mozzarella cheese
- 1 egg
- 1/3 c. milk
Directions

1Slice and coat eggplant with egg and milk mixture, then bread crumbs.

2Put on lightly greased cookie sheet.

3Bake at 350° for 30 minutes.

4Layer sliced tomatoes in an 8 x 8-inch baking dish, then eggplant, then 1/2 of Parmesan cheese, then tomatoes.

5Sprinkle the remaining Parmesan, then Mozzarella cheese.

6Cover with foil. Bake 20 to 30 minutes more.
