Summer Eggplant

  • 1 eggplant
  • 2 or 3 ripe tomatoes
  • Italian flavored bread crumbs
  • 1/2 c. Parmesan cheese
  • 1/2 c. grated Mozzarella cheese
  • 1 egg
  • 1/3 c. milk

Directions

    Slice and coat eggplant with egg and milk mixture, then bread crumbs.

    Put on lightly greased cookie sheet.

    Bake at 350° for 30 minutes.

    Layer sliced tomatoes in an 8 x 8-inch baking dish, then eggplant, then 1/2 of Parmesan cheese, then tomatoes.

    Sprinkle the remaining Parmesan, then Mozzarella cheese.

    Cover with foil. Bake 20 to 30 minutes more.
