Ingredients

  • 1 lb brie cheese (rind removed and torn into irregular pieces)
  • 4 large tomatoes (cut into 1/2 inch pieces)
  • 3 garlic cloves (finely chopped)
  • 1 cup good quality olive oil
  • 1 cup basil (cut in thin strips)
  • 2 12 teaspoons salt
  • 1 teaspoon ground pepper
  • 1 12 lbs linguine
  • freshly grated parmesan cheese, to top

Directions

    Combine tomatoes, brie, basil, garlic, olive oil, salt & pepper in a large serving bowl.

    Leave covered at room temperature for at least 2 hours.

    Just before serving cook pasta according to package directions, drain and and toss into the uncooked sauce, season to taste.

    Plate and top with the Parmesan.
