- 3 tablespoons white wine vinegar
- 1 12 tablespoons Dijon mustard
- salt and pepper
- 1 12 cups chopped grilled chicken breasts
- 2 ripe tomatoes, chopped
- 1 head green leaf lettuce, torn
- 1 head red leaf lettuce, torn
- 1 large avocado, chopped
- 13 cup pine nuts, toasted
- 14 cup shredded mozzarella cheese
Directions

1Vinaigrette: Combine olive oil, vinegar, mustard, salt and pepper in a jar with a tight-fitting lid and seal tightly; shake to mix.

3Salad: Toss the chicken, tomatoes, lettuces, avocado, pine nuts, and cheese in a salad bowl.
