Summer Salad

Ingredients

  • 2 stick celery
  • 10 small cherry tomatoes
  • 10 grapes/ green or red
  • 1 medium red onion / fine choped
  • 1 half cucumber / choped
  • 3 medium carrots / grated
  • 4 spring onions / fine choped
  • 1 can sweetcorn / drained
  • 1 can salad beans / or mixed beans
  • 25 sultanas
  • 1 apple / choped
  • 1 cup green cabbage / fine choped
  • 1 yellow sweet pepper / choped
  • 4 radish / fine sliced
  • 5 tbsp mayonaise / judge this on the day
  • 3 tbsp salad cream
  • 200 grams pasta / any to hand cooked aldente

Directions

    Chop all ingredients to similar size and mix in large bowl, add mayo and salad cream and mix well.

    Cover and fridge for 2 hours minimum, this will allow pasta to absorb excess liquids.

    Remove from fridge 30 mins before serving and add more mayo as needed, you can also add fresh basil or mint etc to your taste.

    serve with bbq or gammon / cheese / crusty bread etc.
