  • 1 1/2 c. chopped fresh apricots or peeled peaches
  • 3/4 c. chopped red or green sweet pepper
  • 3/4 c. chopped seeded cucumber
  • 1/4 c. sliced green onion
  • 1 to 2 jalapeno peppers, seeded and finely chopped
  • 2 Tbsp. honey
  • 2 Tbsp. lime juice
  • 1 Tbsp. snipped fresh cilantro or parsley

    In medium mixing bowl, combine all ingredients.

    Cover; chill for up to 4 hours, stirring once or twice.
