Summer Squash

  • 3 c. summer squash (yellow and zucchini)
  • 1 (4 oz.) can diced green chiles
  • 1 (16 oz.) can tomatoes
  • 1 c. grated cheese (Cheddar, Jack or Mozzarella)
  • red wine (optional)

Directions

    Boil squash until tender (in water or red wine).

    Place in baking dish with tomatoes and chiles; top with cheese.

    Bake until warmed through and cheese is melted.
