Summer Squash Casserole

- 6 medium yellow squash, sliced in rounds
- 1 medium onion, chopped
- 2 slices bread crumbled
- salt and pepper to taste
- 1 egg, beaten
- 1/4 tsp. basil
- 1 c. grated American or Cheddar cheese
Directions

1Cook squash in covered pan in small amount of water along with the onion; squash makes its own liquids; needs only enough water to get it started.

2Cook until tender but not falling apart.

3Drain and combine with bread, egg, salt, pepper, basil and half the cheese.

4Butter 2-quart casserole.

5Place the mixture in it and dot with butter.

6Top with remaining cheese.

7Bake in preheated oven at 375° for 30 to 40 minutes or until firm.

8Serves 6.
