Summer Squash Casserole

Ingredients

  • 6 medium yellow squash, sliced in rounds
  • 1 medium onion, chopped
  • 2 slices bread crumbled
  • salt and pepper to taste
  • 1 egg, beaten
  • 1/4 tsp. basil
  • 1 c. grated American or Cheddar cheese

Directions

    Cook squash in covered pan in small amount of water along with the onion; squash makes its own liquids; needs only enough water to get it started.

    Cook until tender but not falling apart.

    Drain and combine with bread, egg, salt, pepper, basil and half the cheese.

    Butter 2-quart casserole.

    Place the mixture in it and dot with butter.

    Top with remaining cheese.

    Bake in preheated oven at 375° for 30 to 40 minutes or until firm.
