  • 1 large onion, chopped
  • 1 c. uncooked rice
  • 4 tomatoes, peeled and chopped
  • 1 1/2 c. beef consomme
  • 1 eggplant, peeled and cubed
  • 1 green pepper, chopped
  • 3 medium summer squash, sliced
  • 1 Tbsp. vegetable oil

Directions

    Oil a covered casserole large enough to hold mixture.

    Combine rice and vegetables in casserole.
  3. 3
    Pour consomme over mixture. Cover casserole.

    Put in oven and bake at 350° for 45 minutes. Remove casserole from oven.

    Stir gently and return to oven, uncovered, for about 15 minutes or until liquid is absorbed.
