- 1 large onion, chopped
- 1 c. uncooked rice
- 4 tomatoes, peeled and chopped
- 1 1/2 c. beef consomme
- 1 eggplant, peeled and cubed
- 1 green pepper, chopped
- 3 medium summer squash, sliced
- 1 Tbsp. vegetable oil
Directions

1Oil a covered casserole large enough to hold mixture.

2Combine rice and vegetables in casserole.

3Pour consomme over mixture. Cover casserole.

4Put in oven and bake at 350° for 45 minutes. Remove casserole from oven.

5Stir gently and return to oven, uncovered, for about 15 minutes or until liquid is absorbed.
