- 2 c. rice (uncooked)
- 16 oz. nonfat cottage cheese
- 8 oz. pepper Jack cheese (Kraft is good, others may be too hot)
- 8 oz. Longhorn Cheddar
- 1/2 tsp. onion powder (optional)
- 1/2 tsp. garlic powder (optional)
Directions

1Prepare rice according to directions.

2Shred cheeses and mix together.

3In large shallow pan (a lasagna pan works well), layer 1/2 rice, 1/2 cottage cheese and 1/2 shredded cheeses.

4Sprinkle lightly with onion and garlic powder, if desired.

5Layer remaining rice, cottage cheese and shredded cheeses.

6Bake at 350° for about 45 minutes or until hot and just begins to brown.
