  • 2 c. rice (uncooked)
  • 16 oz. nonfat cottage cheese
  • 8 oz. pepper Jack cheese (Kraft is good, others may be too hot)
  • 8 oz. Longhorn Cheddar
  • 1/2 tsp. onion powder (optional)
  • 1/2 tsp. garlic powder (optional)

Directions

    Prepare rice according to directions.

    Shred cheeses and mix together.

    In large shallow pan (a lasagna pan works well), layer 1/2 rice, 1/2 cottage cheese and 1/2 shredded cheeses.

    Sprinkle lightly with onion and garlic powder, if desired.

    Layer remaining rice, cottage cheese and shredded cheeses.

    Bake at 350° for about 45 minutes or until hot and just begins to brown.
