Sunday Chicken Rice Bake

- 1 can mushroom soup (reserve 1/2 c.)
- 1 c milk
- 1 envelope onion soup mix
- 1 (3 oz.) can chopped mushrooms
- 1 c. regular rice
- 1 (10 oz.) frozen peas and carrots
Directions

1Combine all ingredients and pour into 12 x 7 1/2 x 2-inch baking dish.

2Arrange pieces of 2 1/2 or 3 pound broiler/fryer chicken over top.

3Pour the 1/2 cup reserved mushroom soup over chicken.

4Sprinkle with paprika.

5Cover with aluminum foil sealed tightly around edges.

6Bake at 375° (glass:

7350°) until rice is tender, 1 1/4 to 1 1/2 hours.
