- 1 cup onion, finely chopped
- 6 oz. egg substitute
- 2 eggs
- 1/2 cup grated cheddar cheese
- 3 Tbsp. canned chopped tomatoes and green chilies
- 2 Tbsp. milk
- 1/8 tsp. black pepper
- 1/4 tsp. salt
- 1/2 tsp. onion powder
- 1/4 tsp. garlic powder
- Dash of hot sauce, to taste
Directions

1Fry onions.

2Place in a bowl and mix in all other ingredients.

3Beat mixture lightly enough to thoroughly mix.

4In a frying pan, coated with cooking spray, heat to medium high and add the egg mixture.

5Cook while stirring often to scramble and continue until the eggs attain a degree of dryness that you enjoy most.

6Serve with buttered toast.
