  • 1 egg
  • 1/2 c. milk
  • 1 c. (8 oz. can) crushed pineapple in unsweetened pineapple juice (not drained)
  • 1/4 c. margarine, melted
  • 2 c. sifted flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. sugar
  • 2 Tbsp. sugar
  • 2 tsp. grated orange rind

    Beat egg and milk.

    Stir in pineapple and margarine.

    Sift flour, baking powder, salt and 1/4 cup sugar.

    Add to pineapple mixture, stirring only until moistened.

    Fill greased muffin pans 2/3 full.

    Sprinkle with mixture of 2 tablespoons sugar and orange rind.

    Bake in a preheated 400° oven approximately 25 minutes. Yield:
