- 1/2 lb. lentils (1 1/4 c.)
- 3 c. water
- 1 large onion, chopped
- 1 c. chopped carrots
- 3 c. fresh whole wheat bread crumbs
- 1 egg
- 1 tsp. garlic salt
- 1/2 tsp. oregano, crumbled
- 1/2 tsp. salt
- 3 Tbsp. butter
- 4 slices Cheddar cheese, each slice cut into triangles
Directions

1Wash lentils; add water and bring to boiling in large saucepan.

2Lower heat; cover.

3Cook 15 minutes.

4Add onion and carrots.

5Cook 15 minutes more or until lentils are very tender. Remove from heat.

6Cool slightly.

7Stir in bread crumbs, egg, garlic salt, oregano and salt.

8Melt butter in large skillet. Drop lentil mixture by rounded one-half cupfuls into hot butter. Flatten mounds into patties with spatula.

9Cook patties until firm and golden brown on both sides.

10Top each patty with 2 cheese triangles; heat until melted.

11Garnish with parsley sprigs and carrot curls, if you wish.
