Ingredients

  • 1/2 lb. lentils (1 1/4 c.)
  • 3 c. water
  • 1 large onion, chopped
  • 1 c. chopped carrots
  • 3 c. fresh whole wheat bread crumbs
  • 1 egg
  • 1 tsp. garlic salt
  • 1/2 tsp. oregano, crumbled
  • 1/2 tsp. salt
  • 3 Tbsp. butter
  • 4 slices Cheddar cheese, each slice cut into triangles

Directions

    Wash lentils; add water and bring to boiling in large saucepan.

    Lower heat; cover.

    Cook 15 minutes.

    Add onion and carrots.

    Cook 15 minutes more or until lentils are very tender. Remove from heat.

    Cool slightly.

    Stir in bread crumbs, egg, garlic salt, oregano and salt.

    Melt butter in large skillet. Drop lentil mixture by rounded one-half cupfuls into hot butter. Flatten mounds into patties with spatula.

    Cook patties until firm and golden brown on both sides.

    Top each patty with 2 cheese triangles; heat until melted.

    Garnish with parsley sprigs and carrot curls, if you wish.
