- 1/2 lb gingerroot, peeled and sliced very thin
- 1 tablespoon salt
- 1 1/4 cups rice vinegar
- 3 tablespoons water
- 1/4 cup honey
Directions

1Add sliced ginger to a ziplock bag and add salt.

2Shake well to coat ginger.

3Place bag in the refrigerator for 3 hours or overnight.

4Remove ginger from bag and place in a jar with tight fitting lid.

5Add vinegar, water and honey to a small pan.

6Simmer for 5 minutes, stir frequently.

7Let cool for 5 minutes.

8Pour into jar with ginger.

9Close jar and store in refrigerator for 3-5 days.

10Enjoy.
