  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

    run cold water through the rice until it runs clear. drain well. boil rice at high heat for 2 minutes. cover & let simmer at the lowest heat for 10 minutes, until the rice is just cooked but no more. remove from stove & cover with a damp cloth for 10 minutes. meanwhile, heat the sugar & salt in the vinegar until dissolved. remove from stove & let cool. empty the rice into a bowl. mix the vinegar solution into the rice using a wooden spatula. cool the rice by poking holes in it with the spatula & fanning away the steam. don't put in the fridge or stir too much or it'll dry out. cover the cooled rice with the damp towel until you use it.
