Ingredients
- 2 chicken breasts (about 1 1/2 lb.), skinned, boned and cut into 1-inch pieces
- 1 Tbsp. oil
- 1/4 c. orange marmalade
- 3 green onions, bias cut into 1-inch pieces
- 2 Tbsp. vinegar
- 2 Tbsp. soy sauce
- 1 tsp. cornstarch
- 1/4 tsp. ginger
- 1/2 c. water chestnuts
- 1 c. grapes, halved
Directions

1Cook chicken in oil until tender.

2Combine marmalade, onions, vinegar, soy sauce, cornstarch and ginger.

3Remove chicken from skillet, put in marmalade mixture.

4Cook and stir until thick and bubbly.

5Cook 1 more minute.

6Add grapes, chestnuts and chicken. Heat through.

7Serve over rice or noodles.
