Sweet Potato Pudding

- 4 c. grated, raw, peeled sweet potatoes
- 1 stick butter or margarine, melted
- 1/2 tsp. ground cloves
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 3 eggs, beaten
- 1 c. brown sugar, packed
- 1 c. dark Karo syrup
- 1 1/4 c. milk
- 1/2 c. pecan pieces, raisins or coconut or any of the three in combination (optional)
Directions

1Preheat oven to 350°.

2Combine the sweet potatoes, butter, spices, eggs, brown sugar, Karo syrup and milk.

3Stir to mix well. Add the nuts, raisins or coconut, if you like.

4Pour into a greased 1-quart baking dish and bake for 50 to 60 minutes or until well set.

5Serves 8 to 10.
