Sweet Potato Pudding

Ingredients

  • 4 c. grated, raw, peeled sweet potatoes
  • 1 stick butter or margarine, melted
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ginger
  • 1/2 tsp. allspice
  • 3 eggs, beaten
  • 1 c. brown sugar, packed
  • 1 c. dark Karo syrup
  • 1 1/4 c. milk
  • 1/2 c. pecan pieces, raisins or coconut or any of the three in combination (optional)

Directions

    Preheat oven to 350°.

    Combine the sweet potatoes, butter, spices, eggs, brown sugar, Karo syrup and milk.

    Stir to mix well. Add the nuts, raisins or coconut, if you like.

    Pour into a greased 1-quart baking dish and bake for 50 to 60 minutes or until well set.

    Serves 8 to 10.
