- 2 lb. 1 1/2-inch thick round steak
- 3 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. melted fat
- 2 c. canned tomatoes
- 3 sliced onions
- 1 minced garlic
- 1 green pepper, cut into rings
Directions

1Trim excess fat from meat.

2Cut into serving pieces.

3Combine flour, salt and pepper.

4Place meat on a wooden chopping block. Sprinkle flour mixture on meat.

5Pound meat with a mallet.

6Turn meat and repeat on other side.

7Brown meat in fat in skillet on both sides.

8Add onions, tomatoes and garlic.

9Cover and simmer over low heat.

10Add green pepper and cook 20 minutes.

11Skim off fat.

12Thicken juice if necessary.

13Serves 6.
