Ingredients
- 1 3/4 lb. round steak, cut 3/4-inch thick
- 1 Tbsp. vegetable oil
- 1/4 tsp. pepper
- 1/4 c. water
- 4 medium tomatoes
- 1 or 2 medium jalapeno pepper or small bell pepper
- 3/4 tsp. salt
- 1/2 tsp. dried thyme
- 1 large onion
- 1 Tbsp. fresh parsley
Directions

1Chop onion and parsley.

2Cut pepper into 1/8-inch slices.

3In large skillet, heat oil over medium high heat until hot.

4Place beef steaks in skillet and brown on both sides.

5Pour off drippings, if needed.

6Season steak with salt, thyme leaves and pepper.

7Top with onion and jalapeno pepper.

8Cover and continue cooking 30 minutes or until tender.

9Remove steak, cut into serving pieces and return to sauce.

10Serve over prepared rice, pasta or mashed potatoes.

11Garnish with parsley.
