- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 lb. (1/2-inch thick) boneless beef top round or chuck
- 1 Tbsp. shortening
- 1 (8 oz.) can whole tomatoes
- 1 medium onion, chopped
- 1/4 c. green pepper, finely chopped
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Mix flour, 1/4 teaspoon salt and 1/8 teaspoon pepper. Sprinkle 1 side of beef steak with half of the flour mixture.

2Cut beef into 4 or 5 serving pieces.

3Heat shortening in 10-inch skillet until melted.

4Cook meat over medium heat until brown, about 15 minutes.

5Mix tomatoes with remaining ingredients.

6Pour over meat; heat to boiling.

7Reduce heat, cover and simmer until meat is tender, about 45 minutes.
