Ingredients

  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. (1/2-inch thick) boneless beef top round or chuck
  • 1 Tbsp. shortening
  • 1 (8 oz.) can whole tomatoes
  • 1 medium onion, chopped
  • 1/4 c. green pepper, finely chopped
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

    Mix flour, 1/4 teaspoon salt and 1/8 teaspoon pepper. Sprinkle 1 side of beef steak with half of the flour mixture.

    Cut beef into 4 or 5 serving pieces.

    Heat shortening in 10-inch skillet until melted.

    Cook meat over medium heat until brown, about 15 minutes.

    Mix tomatoes with remaining ingredients.

    Pour over meat; heat to boiling.

    Reduce heat, cover and simmer until meat is tender, about 45 minutes.
