Swiss-Style Pita

  • 2 whole pita breads grain
  • 1 1/8 cups cooked chicken or roasted, shredded
  • 5 2/3 tablespoons cheese panela, grated, may substitute a mild cheddar
  • 7 1/8 tablespoons mozzarella cheese shredded
  • 8 tomatillos
  • 1 clove garlic
  • 4 sprigs cilantro
  • salt and ground black pepper

Directions

    Boil the tomatoes until soft. Puree in the blender along with the garlic, cilantro, salt, and pepper.

    Pour the puree into a pan and allow to come to a slight boil. Set aside.

    Mix the chicken with the panela cheese.

    Separate each pita pocket into two thin slices of bread and place the chicken and cheese mixture onto each side. Place onto a baking dish.

    Pour the puree over the pita slices and sprinkle with mozzarella cheese. Broil until the cheese is melted and begins to brown.
