- 1 c. bulgur wheat
- 1 tsp. salt
- 3 c. hot water
- 1/3 c. lemon juice
- 2 c. finely chopped fresh parsley
- 1 c. chopped cucumber
- 1/2 c. sliced green onion
- 4 Tbsp. tomatoes, chopped
- 1 small clove minced garlic
Directions

1Combine bulgur wheat, hot water and salt together; let stand for 1/2 hour.

2Cook until tender and let cool.

3Mix all other ingredients in with bulgur mixture.

4Chill for about 3 hours.
