  • 1/2 cup cracked wheat bulghar
  • salt
  • pepper
  • 3 tomatoes
  • 4 stalks scallions
  • 2 tablespoons mint
  • 1 lemon
  • 2 bunches parsley
  • 1/4 cup olive oil
  • 2 cucumbers

Directions

    Pout water onto bulghar wheat just over the top. Soak for 15 minutes. Drain excess water.

    Dice cucumbers, tomatoes, parsely, mint and scallions finely. Add olive oil, salt and pepper to taste. Cover and let sit in the refrigerator for up to one 1 hour. Keeps approximately 3 days.

    Serve on individual leafs of romaine lettuce.
