  • 1 pound Ground Beef
  • 1 can Tomatoes With Green Chilies Or Rotel (10 Ounce Can)
  • 1 package Taco Seasoning, 1 Ounce Packet
  • 1 can (15 Oz. Size) Black Beans
  • 1 can (15 Oz. Size) Corn
  • 1 can (15 Oz. Size) Refried Beans
  • 12 whole Corn Tortillas
  • 2 cups Shredded Cheddar Cheese
  • 1/2 cups Sour Cream
  • Optional For Garnishes: Diced Tomatoes And Avocados; Chopped Cilantro; Salsa

    Preheat oven to 350 F.

    In a large 14-inch skillet over medium heat, cook ground beef until browned.

    Drain off any grease.

    Add the tomatoes with green chilies and taco seasoning and stir mixture until seasoning has dissolved.

    Let mixture simmer until all of the liquid is gone, about ten minutes.

    Meanwhile, drain and rinse the black beans and corn.

    Set aside.

    Open the re-fried beans and set aside.

    Grab a 3 quart casserole dish and spray with cooking spray.

    When the liquid has cooked off of the meat mixture, remove it from the heat.

    Start laying your corn tortillas, refried beans, taco meat, black beans, corn, cheese and sour cream into the casserole dish.

    Just keep repeating layers until your fillings are gone.

    Bake for 30 minutes.

    Remove dish from the oven and let it cool for 5 minutes before serving.

    Garnish with avocado, tomatoes, and cilantro if desired
