Ingredients
- 8 c. shredded lettuce
- 2 medium tomatoes, diced
- 2 medium green peppers, diced
- 8 tacos, broken into small pieces
- 1 lb. ground turkey
- 15 oz. can tomato sauce
- 1/2 c. water
- 1 pkg. taco seasoning
- 4 oz. shredded low/no-fat Cheddar cheese
Directions

1Combine veggies in large bowl.

2Sprinkle tacos on top.

3Cook ground turkey in nonstick pan until water evaporates.

4Add tomato sauce, water and taco seasoning.

5Reduce heat and simmer for 10 minutes.

6Pour hot turkey-tomato mixture over veggies.

7Mix quickly and thoroughly until lettuce is wilted.

8Sprinkle cheese on top.

9Serve warm or cold.
