Taco Salad Cups

Ingredients

  • 1 can (more or less) vegeburger
  • 1/4 c. (more or less) barbecue sauce
  • 2 1/2 tsp. minced onion
  • 1 to 2 tsp. brown sugar
  • 4 medium tomatoes (I like to use little tomatoes and make individual salad cups)
  • 3 c. shredded lettuce
  • 1 c. shredded Cheddar cheese
  • 1/3 c. coarsely crushed taco chips
  • sour cream
  • sliced ripe olives
  • commercial taco sauce

Directions

    Crumb vegeburger into mixing bowl or casserole dish.

    Cover tightly and microwave at High for 3 to 5 minutes (may need to add a little oil to dish).

    Stir in barbecue sauce, onion and sugar; set aside.
