  • 1 medium sized onion, chopped (1/2 c.)
  • 1 clove garlic, crushed
  • 2 Tbsp. vegetable oil
  • 1 lb. ground round or chuck
  • 1 large tomato, peeled and chopped (1 c.)
  • 1 tsp. leaf oregano, crumbled
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • vegetable oil (for frying)
  • 1 pkg. frozen tortillas (12)
  • 1 small head lettuce, shredded (about 2 c.)
  • 2 c. Cheddar cheese, shredded (8 oz.)
  • 3 medium sized tomatoes, peeled and chopped
  • bottled hot pepper sauce

    Make Beef Filling:

    Saute onion and garlic in the 2 tablespoons of oil until soft, about 5 minutes.

    Add ground beef and cook until brown.

    Add tomato, oregano, salt and pepper.

    Cook, stirring frequently, about 10 minutes or until thick and heated thoroughly.
