Tamale Egg Casserole

  • 8 eggs
  • 1/2 cup Vidalia Onion
  • 1/2 cup chopped Red Bell Pepper
  • 1/4 cup Half n Half
  • 1/4 cup grated parmesan cheese
  • 1 tbsp Crushed Garlic
  • 8 frozen or fresh Beef Tamales (susbstitute any flavor)

Directions

    Preheat oven to 350.

    Then line tamales (you may need to split a few tamales to cover pan) on a buttered 6x6 pan.

    With a spatula press down tamales to create a base layer so egg mixture sits on top.

    In a bowl wisk eggs, onion, red pepper, half n half, parmesan cheese, black pepper, and garlic until well incorporated.

    Pour egg mixture on top of tamale base.

    Place in oven for 20 to 25 minutes or until egg mixture is firm.
