Ingredients

  • 1/2 head lettuce, shredded or slightly more
  • 3/4 c. coarsely chopped celery
  • 3/4 c. chopped red or green pepper
  • 3/4 c. chopped red onion
  • 1/2 pkg. frozen peas, cooked and drained
  • 1 c. low-fat mayonnaise
  • 1 Tbsp. sugar
  • 1 c. shredded Cheddar cheese
  • 4 to 5 slices microwaved bacon, crumbled

    Layer the ingredients in order listed:

    lettuce, celery, red or green pepper, red onion and peas.

    Spread mayonnaise on top of peas to seal.

    Sprinkle with sugar.

    Top with shredded cheese. Cover with plastic wrap.

    Refrigerate 4 hours or overnight. Before serving, top with freshly made bacon pieces.
