- 2 lb. lean hamburger
- 2 medium red peppers, chopped
- 1 medium onion, chopped
- 1 (11 oz.) can nacho cheese soup
- 1 can ripe olives, sliced
- 1 (8 oz.) jar mild chunky salsa
- 1/4 c. water
- 2 (8 oz.) boxes cornmeal mix
- 3/4 c. grated Co-Jack cheese
- cherry tomatoes, cut in 1/2
Directions

1Brown hamburger, onion and peppers in a large pan.

2Drain fat. Stir in soup, salsa, water and olives.

3Reduce heat; simmer 5 minutes.

4Meanwhile, prepare cornmeal mixes according to package. Put 1/2 in greased 13 x 9-inch pan.

5Then layer hot meat mixture real carefully.

6Add remaining cornmeal on top.

7Bake 35 minutes in 350° oven.

8Remove from oven; top with grated cheese and halved cherry tomatoes.
