Ingredients

  • 12 tamales (frozen or homemade)
  • 16 chicken breasts
  • 2 cans Mexicorn
  • 2 to 3 c. shredded Cheddar cheese
  • 1 can Las Palmas enchilada sauce (19 oz.)
  • 2 cans pitted black olives
  • olive oil to taste (no more than 1/4 cup)

Directions

    Cook chicken breasts; shred meat.

    Cook tamales according to directions.

    Mix all ingredients together.

    Pour into large casserole(s) and bake at 350° for 1 hour.
