- 2 c. skim milk
- 2 Tbsp. quick-cooking tapioca
- non-calorie liquid sweetener equal to 5 Tbsp. sugar
- 1/4 tsp. salt
- 2 slightly beaten egg yolks
- 1/2 tsp. vanilla
- 2 egg whites
Directions

1Combine skim milk, tapioca, sweetener and salt; let stand 5 minutes.

2Add beaten egg yolks.

3Bring to a boil over medium heat, stirring constantly.

4Remove from heat (mixture will be thin).

5Add vanilla.

6Beat egg whites to stiff peaks.

7Gradually fold in hot mixture.

8Chill.
