- 1 (16 oz.) can roast beef or meat of choice
- 1 doz. corn tortillas
- 1/2 c. oil
- 2 medium avocados, mashed
- 1/2 small onion
- 1/2 tsp. salt
- 1 Tbsp. lemon juice
- 1/2 c. salsa
Directions

1Mix avocados, onion, salt and lemon juice.

2Set aside.

3Warm tortillas over fire in skillet or on grill.

4Place roast beef in center of tortillas and roll lengthwise; secure with toothpick. Fry in skillet with oil.

5When done, remove and place on plate with paper towel.

6Serve with avocado mixture or salsa as desired.
