Tarragon Chicken

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp. dried tarragon
  • 1 can (10-3/4) soup
  • 1/2 cup milk
  • 3/4 cup frozen broccoli florrets
  • 10 to 12 salted cashews, coarsely chopped
  • 3 tbsp. very coarsely chopped leeks
  • Salt and Pepper to taste

Directions

    Preheat oven to 350F.

    Cook chicken over medium-high heat until both sides are just starting to brown, but are not cooked inside.

    While the chicken is cooking mix all of the ingredients together in a pie plate or bread pan.

    Add the chicken and make sure that it is covered in the sauce.

    Cook for approximately 25 minutes until the chicken is cooked through.

    Is good with wild rice on the side.
