- 1/4 c. mayonnaise
- 2 Tbsp. drained pickle relish
- 1 1/2 to 2 c. country style mashed potato flakes
- 2 eggs
- 1 tsp. salt
- 2 lb. fish fillets
- oil to fry fish
Directions

1Lightly beat together mayonnaise, eggs, pickle relish and salt.

2Dip fish into egg mixture, then into the potato flakes, coating well.

3Fry in oil 5 to 10 minutes until crisp.

4Turn and fry other side.
