  • 1/4 c. mayonnaise
  • 2 Tbsp. drained pickle relish
  • 1 1/2 to 2 c. country style mashed potato flakes
  • 2 eggs
  • 1 tsp. salt
  • 2 lb. fish fillets
  • oil to fry fish

Directions

    Lightly beat together mayonnaise, eggs, pickle relish and salt.

    Dip fish into egg mixture, then into the potato flakes, coating well.

    Fry in oil 5 to 10 minutes until crisp.

    Turn and fry other side.
