  • 3 wide strips orange peel
  • 1/2 cup cognac or brandy
  • 4 firm large Granny Smith apples, peeled and cut into 12 wedges
  • 2 tablespoons unsalted butter
  • For cake batter
  • 1 cup flour +2 tablespoons corn or potato starch
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 extra large eggs at room temperature
  • 1/2 cup sugar
  • 1/4 cup sour cream or plain yogurt
  • 1 teaspoon vanilla
  • 2 teaspoons orange zest
  • 1/2 cup canola oil
  • About 1 tablespoon Turbinado sugar
