- 2 c. white rice
- 1/3 c. cooking oil
- 1 small can tomato sauce
- 1 can Ro-Tel tomatoes and green chilies
- 1 onion, chopped
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 2 tsp. salt
- 1 fresh jalapeno pepper, seeds removed and chopped fine
Directions

1Heat oil in large skillet.

2Add rice and chili powder; stir until rice is clear.

3Add onion and garlic; cook until they turn clear.

4Turn burner to medium heat.

5Add tomato sauce and 1 can water; stir.

6Drain tomatoes and chilies.

7Add to rice mixture. Add jalapeno and all spices; stir in real good.

8Reduce heat to a simmer.

9Add water occasionally.

10Do not let sauce dry out. Simmer 25 to 35 minutes or until rice is soft.

11Let set 10 minutes.
