Ingredients

  • 2 c. white rice
  • 1/3 c. cooking oil
  • 1 small can tomato sauce
  • 1 can Ro-Tel tomatoes and green chilies
  • 1 onion, chopped
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 2 tsp. salt
  • 1 fresh jalapeno pepper, seeds removed and chopped fine

Directions

    Heat oil in large skillet.

    Add rice and chili powder; stir until rice is clear.

    Add onion and garlic; cook until they turn clear.

    Turn burner to medium heat.

    Add tomato sauce and 1 can water; stir.

    Drain tomatoes and chilies.

    Add to rice mixture. Add jalapeno and all spices; stir in real good.

    Reduce heat to a simmer.

    Add water occasionally.

    Do not let sauce dry out. Simmer 25 to 35 minutes or until rice is soft.

    Let set 10 minutes.
