  • 2 cans black-eyed peas, rinsed & drained
  • 1/2 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic, minced
  • 1/4 cup mined onions, sweet or red
  • freshly ground black pepper

Directions

    Placed peas in a bowl or glass jar. Add remaining ingredients and mix. Cover/seal and refrigerate for at least one day before serving. Serve with tortilla chips.

    Optional ingredients: chopped jalapeno peppers, green onions, cilantro.
