  • 1 lb. ground beef
  • 2 Tbsp. oil
  • 3/4 c. Minute rice
  • 3 large onions, sliced
  • 1 large green bell pepper, sliced
  • 1 (1 lb.) can tomatoes
  • 1/2 can tomato juice
  • 2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

    In electric skillet, heat oil.

    Slowly cook onions and pepper until soft.

    Transfer to small bowl.

    Raise heat; brown meat. Drain fat.

    Return vegetables to meat in skillet; add seasonings, tomato juice, tomatoes and rice.

    Cover and lower heat to 275° to 300°; cook until rice is soft, usually about 15 to 20 minutes.
