- 1 lb. ground beef
- 2 Tbsp. oil
- 3/4 c. Minute rice
- 3 large onions, sliced
- 1 large green bell pepper, sliced
- 1 (1 lb.) can tomatoes
- 1/2 can tomato juice
- 2 tsp. chili powder
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1In electric skillet, heat oil.

2Slowly cook onions and pepper until soft.

3Transfer to small bowl.

4Raise heat; brown meat. Drain fat.

5Return vegetables to meat in skillet; add seasonings, tomato juice, tomatoes and rice.

6Cover and lower heat to 275° to 300°; cook until rice is soft, usually about 15 to 20 minutes.
