  • 12 oz can diced tomatoes with chilis (such as Rotel)
  • 2 x 6 oz cans tomato paste
  • 16 oz cottage cheese
  • 2 eggs
  • 8 x 6-inch corn tortillas
  • 8 oz package shredded Monterey Jack cheese
