Thai Beef Curry

Ingredients
- 6 baby corns, halved
- 4 oz. green beans, halved
- 1 tbsp. vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tbsp. yellow Thai curry paste
- 8 oz. sirloin steak, fat trimmed, cut into strips
- 1 red pepper, seeded and sliced
- 8 kaffir lime leaves
- 1 tsp. brown sugar
- 2 tbsp. black bean sauce
- Juice of 1 lime
- 4 tsp. Thai fish sauce
- 12 Thai basil leaves
- 8 mint leaves, sliced
Directions

1Plunge the corn and beans into boiling water for 2 minutes to soften. Drain.

2Heat the vegetable oil in a large wok. Add the onion and garlic, and cook for a couple of minutes.

3Add the curry paste, and fry for 2 minutes, stirring. Push the onion mixture to one side.

4Increase the heat, add the steak, and cook for 2 minutes to brown.

5Add the red pepper, corn, and beans, and mix well. Stir in the lime leaves, sugar, black bean sauce, lime juice, fish sauce, and 1/3 cup water or more if you like a runnier sauce. Bring to a simmer for a couple of minutes.

6Season with black pepper, and then sprinkle on the Thai basil and mint.
