  • 4 chicken breasts, diced
  • 1/2 c. roasted cashew nuts, salted
  • 1/2 c. dried red chilies
  • 1 medium onion, diced
  • 8 garlic cloves, crushed
  • 1/2 c. green onion, chopped
  • 2 Tbsp. fish sauce
  • 2 Tbsp. dark soy sauce
  • 2 Tbsp. vegetable oil

Directions

    Heat oil in wok.

    Fry the garlic, then add the dried chilies. Add the onion and heat until translucent.

    Add the fish sauce and soy sauce.

    Add the chicken and stir-fry until cooked through. Add cashews and heat 3 minutes more.

    Remove from heat and add green onions.

    Serve with steamed white rice.
