- 4 chicken breasts, diced
- 1/2 c. roasted cashew nuts, salted
- 1/2 c. dried red chilies
- 1 medium onion, diced
- 8 garlic cloves, crushed
- 1/2 c. green onion, chopped
- 2 Tbsp. fish sauce
- 2 Tbsp. dark soy sauce
- 2 Tbsp. vegetable oil
Directions

1Heat oil in wok.

2Fry the garlic, then add the dried chilies. Add the onion and heat until translucent.

3Add the fish sauce and soy sauce.

4Add the chicken and stir-fry until cooked through. Add cashews and heat 3 minutes more.

5Remove from heat and add green onions.

6Serve with steamed white rice.
