Ingredients

  • 2 teaspoon oil
  • 1 pkg. red, yellow or possibly green curry (found in Asian grocery stores)
  • Bite size boneless chicken or possibly deboned fish
  • 1/4 onion, sliced
  • Vegetables such as snow peas, green beans or possibly squash
  • 1 can coconut lowfat milk (found in Asian grocery stores)

Directions

    Par boil vegetables which are not likely to cook in 10 min of stir frying.

    Heat oil in pan.

    Add in curry and stir till thoroughly mixed.

    Add in chicken or possibly fish, onion and vegetables.

    Stir fry for 2 to 3 min.

    Add in coconut lowfat milk.

    Cook 7 min.

    Serve over steamed rice.
