  • FOR THE DRESSING:
  • 2 Tablespoons Grated Yellow Onion
  • 3 Tablespoons Cider Vinegar
  • 1-1/2 Tablespoon Winterized Olive Oil
  • 2 teaspoons Dijon Mustard
  • 1/4 teaspoons Salt
  • Fresh Ground Black Pepper
  • FOR THE SALAD:
  • 1 whole Large Apple Of Your Choice, Washed, Cored Then Julienned
  • 5 cups Baby Spinach Leaves, Stemmed
  • 1/2 cups Pecan Halves
  • 1/3 cups Grated Sharp White Cheddar Cheese

Directions

    Combine all dressing ingredients in a large jar, put the lid on and shake to mix. Add the apple slices into the jar and place in the refrigerator for one hour.

    In a large serving bowl toss spinach with dressing and apples, then top with pecans and grated cheese. Serve immediately.
