The Ultimate Summer Sandwich

- 4 slices white bread
- 4 tablespoons pesto sauce
- 5 ounces taleggio, cut into slices
- 2 ounces sun-dried tomatoes, drained and roughly chopped
- 2 ounces arugula
- 4 slices prosciutto
- 2 medium eggs, beaten
- 1 tablespoon olive oil
Directions

1Spread 2 slices of the bread on 1 side with the pesto.

2Top with the Taleggio cheese and scatter with the sun-dried tomatoes, followed by the arugula.

3Sandwich together with the remaining bread slices and squash down slightly.

4Wrap 2 slices of prosciutto around each sandwich.

5Soak each sandwich in the beaten egg for 3 minutes each side.

6Heat the olive oil in a large, non-stick frying pan over a medium-low heat, add the sandwiches to the hot pan and fry for 6 minutes, turning halfway, until the Taleggio is melting and the prosciutto is golden.

7Transfer to kitchen paper to drain.

8Cut each sandwich in half and serve with plenty of napkins.
