Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. ground mace
  • 3 beaten eggs
  • 1/2 c. cooking oil
  • 1/2 c. milk
  • 2 c. shredded carrots
  • 1 1/3 c. flaked coconut
  • 1/2 c. chopped maraschino cherries

Directions

    Stir together flour, sugar, baking powder, soda, mace and 1/2 teaspoon salt.

    Combine eggs, oil and milk.

    Add to dry ingredients.

    Mix well.

    Stir in carrots, coconut and cherries. Pour into three 21 ounce pie filling cans.

    Bake in a 350° oven for 1 to 1 1/4 hours (or pour batter into one greased 9 x 5 x 3-inch loaf pan and bake in a 350° oven for 45 to 50 minutes).

    Cool in cans 10 minutes.

    Wrap and store overnight before slicing.
