Ingredients

  • 8 chicken breasts
  • salt and pepper
  • 3/4 stick margarine
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 small jar chopped pimentos
  • 1 c. uncooked rice
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 cans water or less
  • 1 can sliced water chestnuts
  • 1 c. grated Cheddar cheese

Directions

    Salt and pepper chicken and place in a large 11 x 14-inch Pyrex.

    Melt margarine and add onion, bell pepper, pimentos, rice, soups, water and water chestnuts.

    Pour over chicken breasts. Cook at 350° for 15 minutes, then turn oven down to 300° and cook for 1 hour more.

    Add cheese 5 minutes before dish is done and return to oven for the last 5 minutes.
