- 1 c. crushed pineapple & juice
- 14 dry apricots
- 8 pitted ready to eat prunes
- 1 c. real maple syrup
- 2 tbsp. minute tapioca
- 1 teaspoon butter
- Healthy pinch of cinnamon
- Crust for crust pie
Directions

1Stew fruit fold in saucepan over medium heat with the butter till tender.

2Mix the tapioca with the syrup and pour into warm fruit.

3Stir in cinnamon.

4Stew for 10 min longer, stirring constantly.

5Pour into unbaked pie shell.

6Distribute fruit proportionately.

7Cover with top crust and bake in 400 degree oven for about 40 min.

8Cold and serve with unsweetened whipped cream.
