Three-Onion Relish

Ingredients

  • 1/4 c. olive oil
  • 3 Tbsp. lemon juice
  • 1 pkg. (16 oz.) thawed frozen small white onions
  • 1 large (8 oz.) red onion, peeled and sliced thick
  • 2 bunches (about 16 oz.) green onions, trimmed and cut in 2-inch lengths
  • 1/4 c. Italian parsley leaves, chopped coarse
  • 3/4 tsp. salt
  • 1/2 tsp. granulated sugar
  • 1/2 tsp. pepper

Directions

    Heat oil in a large skillet over medium heat.

    Add lemon juice and all onions.

    Cook 10 minutes or until onions are crisp-tender. Stir in remaining ingredients.

    Remove from heat; cool.

    Cover and refrigerate at least overnight or up to 3 days for flavor to develop.
