Ingredients

  • 1 medium cauliflower (about 1 1/2 pounds), broken into small florets, or 10 ounces frozen cauliflower florets
  • 2 tablespoons water
  • 3/4 to 1 1/2 teaspoons cider vinegar
  • 1/2 medium garlic clove, minced
  • 1/4 teaspoon dried thyme, crumbled
  • Dash of pepper
  • 2 teaspoons finely snipped fresh parsley or 1 teaspoon dried, crumbled

Directions

  1. 1
In a medium saucepan, bring a small amount of water (this is not the 2 tablespoons) to a boil over high heat.
  2. 2
Boil fresh cauliflower, covered, for 10 to 12 minutes, or until just tender.
  3. 3
If using frozen cauliflower, prepare using the package directions, omitting the salt.
  4. 4
    Drain well in a colander.
  5. 5
    Return to the pan.
  6. 6
Meanwhile, in a medium bowl, stir together 2 tablespoons water, the vinegar, garlic, thyme, and pepper.
  7. 7
    Set aside.
  8. 8
When the cauliflower is ready, stir in the vinegar mixture.
  9. 9
Cook, covered, for 5 to 8 minutes, or until the cauliflower is tender.
  10. 10
    Serve sprinkled with the parsley.
